Several times a year, we open the doors of The Cook's Atelier to guests from around the world who are interested in learning more extensively about the food and wine culture of Burgundy. Our Seasonal Burgundy Masterclass program is a special opportunity for an in-depth and personalized experience at The Cook's Atelier. The week gives you a chance to spend one-on-one time with us where we'll come together to cook in our kitchen and immerse ourselves in the rich culture of Burgundy.  

We’ll begin the program on Monday evening where we'll meet and greet guests at our Atelier for a candlelit welcome dinner that includes a Champagne apéritif and a seasonal menu highlighting some of our favorite artisan food and wine producers. Each course will be paired with the great wines of Burgundy. 

During the week, we'll meet each morning for French pastries and coffee at our Atelier before the day begins.  We’ll explore the local market in Beaune and meet some of our favorite artisan food producers - gardeners, butchers, bakers, cheese makers, winemakers, and fishmongers.  We'll gather around our Atelier kitchen for hands-on cooking workshops and learn the importance of sourcing locally and cooking seasonally.  Each workshop will highlight classic French cooking techniques, both savory and sweet, and methods every home cook should know.  We'll touch on key cooking methods and kitchen rituals, talk through the importance of proper knife skills and the essentials of having a well-stocked pantry, and cover basics such as blanching, braising, frying, grilling, poaching, roasting, sautéing and searing. We'll continue with French butchery techniques, prepare essential stocks and French sauces, master the art of pastry doughs, desserts, and soufflés, and explore the craft of making a simple boule or brioche.  We'll review the importance of creating a proper French larder and setting up a kitchen with classic cook's tools and provisions. Later in the week, we'll visit Beaune's oldest wine cave and enjoy a leisurely lunch at our neighborhood Michelin three-star restaurant, considered to be one of France's finest!  

Each day, once the masterclass is complete, we'll head upstairs to our light-filled dining room where Champagne flutes are filled and toast one another in anticipation of the long French lunch ahead. The zinc-topped table is set in beautiful French fashion with vintage linens and cutlery, fresh flowers, and plenty of candlelight. Guests enjoy the seasonal menus created from the fruits of their labor, presented in beautifully plated courses. Each course is presented and paired with some of France's most extraordinary wines, demystifying terroir and the art of winemaking. Guests enjoy the meal, the company and the conversation around the table, savoring the experience as a whole.

An experience at The Cook’s Atelier is truly unique as it is so much more than just a cooking school. Guests are immersed in the day-to-day beauty and attention to detail that surrounds.  They experience the warmth and hospitality in our kitchen and quickly become fast friends and part of our extended family.  Amidst the chopping, dicing and the clanking of copper pots, practical aspects of French cooking will be covered along with the greater importance of sourcing and forming relationships with the artisans who grow the food we cook.  And when the program is complete, guests take home much more than just the recipes. They’ll each return home inspired to cook and to share the table with the people who matter most.

A DAY IN BURGUNDY |  One-Day Hands-on Cooking Class

Just a couple times a week, we open our doors to visitors who are interested in experiencing a convivial cooking class and dining experience. A Day in Burgundy is a full day of exploring, cooking, and tasting designed to introduce guests to the gastronomic culture of the region. Guests join us from around the world, drawn together by a shared love of food, wine, and France and enjoy a delightful day with us in our Atelier! This program includes a visit to our favorite fromagerie and local artisan butcher or a morning Beaune market tour to gather provisions for lunch, a two-hour hands-on cooking class in our Atelier kitchen, a Champagne apéritif followed by a seven-course menu including a local cheese course, and a Burgundian wine pairing hand-selected from our wine shop.

In our Atelier teaching kitchen, everyone will don an apron, standing behind their cutting board as we talk through the day’s menu. We will explain and demonstrate the classic French culinary techniques used in the day’s menu, from sautéing to searing to sauce-making, and then everyone will get to work prepping the ingredients and participating in the hands-on cooking class.

Once the cooking is done, aprons will come off, and we’ll head up to the airy third-floor dining room for a leisurely lunch. Our zinc-topped table will be set for the convivial lunch in simple French fashion, next to a wall of windows overlooking the atrium below. We’ll light the candles and fill the Champagne flutes, and toast one another for a good day’s work. After everyone finds a seat, we’ll pour the wine and bring up the first course. The menu is constantly changing, depending on the season, and is always full of new surprises from our favorite artisan food producers and from The Cook's Atelier kitchen potager.

Our Private Gatherings* are designed for larger parties, and include a brief introductory cooking demonstration and a seasonal, seven-course meal with a Burgundian wine pairing. Guests assist in the preparation of the menu by learning to make traditional Gougères. After the brief cooking session, guests enjoy a convivial dining experience at our Atelier. Tables are set with vintage French linens and flatware, crystal stemware, and plenty of fresh flowers. As the sun sets, candles are lit and guests are offered a glass of chilled bubbly, along with an apéritif to begin the meal. The menu is market-inspired, based on the season’s offerings, and includes a local cheese course and wine pairing. A minimum of ten guests is required.

*Our cooking classes and workshops fill up very quickly. Reservations are taken first come first serve. Early bookings are strongly advised. All of our culinary workshops are designed for adults, and there is walking involved. As much as we love little ones, we are not able to accommodate children (under 16) during our weekly cooking classes and seasonal workshops in consideration of the other guests participating.  Please send us an email as we can sometimes accommodate private groups with children on other days of the week. 

**Airfare and lodging are not included, but we are happy to give some of our favorite suggestions regarding hotels and travel arrangements. Evenings are on your own to explore Beaune and to visit some of our favorite local dining spots
