A DAY IN BURGUNDY | Market Tour and Cooking Class

Our A Day in Burgundy program is a full day of exploring, cooking, and tasting designed to introduce guests to the delightful gastronomic culture of the region. The day includes a visit to some of our favorite artisan food shops or a morning Beaune market tour, a hands-on cooking class in our Atelier kitchen, a Champagne apéritif followed by a seven-course lunch including a local cheese course, and wine pairings hand-selected from our wine shop.

On Wednesdays, we’ll begin the morning in front of Hess, our favorite fromagerie in the center of town, to select local cheeses and then wander down the street to visit our local artisan butcher for the day's main course.  On Saturdays, market days in Beaune, we'll meet in front of Hess before exploring the Beaune farmer’s market. Each morning, we'll spend time chatting with our favorite artisan food producers and gathering provisions for lunch, before winding our way back to the Atelier.

In our Atelier teaching kitchen, everyone will don an apron, standing behind their cutting board as we talk through the day’s menu. We will explain and demonstrate the classic French culinary techniques used in each recipe, from sautéing to searing to sauce-making, and then everyone will get to work prepping the ingredients and participating in the hands-on cooking class.

Once the cooking is done, aprons will come off, and we’ll head up to the airy third-floor dining room for a leisurely lunch. A zinc-topped table will be set for lunch in simple French fashion, next to a wall of windows overlooking the atrium below. We’ll light the candles and fill the Champagne flutes, and toast one another for a good day’s work. After everyone finds a seat, we’ll pour the wine and bring up the first course. The menu is constantly changing, depending on the season, and is always full of new surprises from our favorite artisan food producers and from The Cook's Atelier kitchen potager.

Just a few times a year, we open the doors of The Cook's Atelier to guests from around the world who are interested in learning more about the food and wine culture of Burgundy as well as participating in the behind the scenes of our Atelier.  This is a special opportunity for an in-depth and personalized experience at The Cook's Atelier. The week gives you a chance to spend one-on-one time with us where we'll share insight on how we created our business, come together to cook in our kitchen, and immerse ourselves in the rich culture of Burgundy.  

We’ll begin the program on Monday evening where we'll meet and greet guests at our Atelier for a candlelit welcome dinner that includes a Champagne apéritif and a seasonal menu highlighting some of our favorite artisan food producers.  Each course will be paired with the great wines of Burgundy.

During the week, we’ll explore the local market in Beaune and meet some of our favorite artisan food producers - gardeners, butchers, bakers, cheese makers, winemakers, and fishmongers.  We'll gather around our Atelier kitchen for hands-on cooking workshops and learn the importance of sourcing locally and cooking seasonally.  Each workshop will highlight classic French cooking techniques and methods that every home cook should know.  We'll touch on key cooking methods and kitchen rituals, talk through the importance of proper knife skills and the essentials of having a well-stocked pantry, and cover certain basics such as blanching, braising, frying, grilling, poaching, roasting, sautéing or searing. We'll continue with classic French butchery techniques, prepare essential stocks and classic French sauces, master the art of pastry doughs, desserts, and French soufflés, and explore the craft of making a simple boule or brioche.  We'll review the importance of creating a proper French larder and setting up your kitchen with classic cook's tools and provisions.

We'll visit Beaune's oldest wine cave and enjoy a leisurely lunch at our neighborhood Michelin three-star restaurant, considered to be one of France's finest!  Throughout the week, we'll enjoy seasonal lunches with wine pairings and taste some of Burgundy's most extraordinary wines, demystifying terroir and the art of winemaking.  We'll browse some of our local brocantes and antique shops and learn more about prop and food styling, as well as the art of plating.  Each day brings something new! We'll meet each morning for French pastries and coffee at our Atelier before the day begins.

*Our cooking classes and workshops fill up very quickly. Reservations are taken first come first serve. Early bookings are strongly advised. All of our culinary workshops are designed for adults, and there is walking involved. As much as we love little ones, we are not able to accommodate children (under 16) during our weekly cooking classes and seasonal workshops in consideration of the other guests participating.  Please send us an email as we can sometimes accommodate private groups with children on other days of the week. 

**Airfare and lodging are not included, but we are happy to give some of our favorite suggestions regarding hotels and travel arrangements. Evenings are on your own to explore Beaune and visit some of our favorite local dining spots
