Having direct access to a kitchen garden helps a cook stay in tune with the food she prepares. It doesn’t have to be grand—it can be something as simple as a window box full of herbs or a small terrace with a few pots of lettuces and tomatoes. It’s the idea of taking something that you’ve grown, harvesting it, and using it in a dish that you prepare to bring the experience of cooking full circle. 

As cooks passionate about farm-to-table cooking and eating, we have always had some sort of garden in the works, be it simple raised beds or herbs planted in a window box.  After a decade of working closely with our local producers in the Burgundy region, we wanted to expand our knowledge, get our own hands dirty, and grow some of the food we cook.  In the beginning of our culinary adventure in France, we purchased a property in the countryside that includes a stone house, barn, orchard and pasture which is the home of our organic cook’s garden.  This property is an extension of our Atelier in Beaune and is lovingly referred to as The Woodland House. A beautiful example of simplicity in nature, the entire property, which is now back to its original state as it was 200 years ago, is a haven for wildlife in the area as well as a little ecosystem in its own right.  Once owned by an avid arborist, the property benefits from a wide variety of trees, shrubs and prairie flowers as well as wild edibles.  It is a beautiful example of biodiversity and our intention is to continue to preserve the property’s natural woodland setting using companion planting and permaculture as our main inspiration in our working kitchen garden. In addition to our cook’s garden, we’ve added bee hives and a hen house and we’ll soon be adding a proper greenhouse just next to the forest garden.
